Happy #whatiatewednesday! And also, Happy Birthday to one of my brothers! We’ve always had an amazing sense of style.
{Breakfast} Baked Oatmeal. I can’t go back to eating regular oatmeal after baked oatmeal. I love the texture so much more than regular oats.
The top gets a crispy crust and then it’s like a super soft cookie on the inside.
{Snacks} We did some running around this morning and then dropped off 1 kid at a sleepover, so I had this Clif bar and some mama’s jiggle juice to keep me going.
{Lunch} I found these vegetable egg rolls in the freezer and baked them at 425 for about 20 minutes and then covered in the plum sauce. So delicious. I should mention here that on Tuesdays, I take a once a week shot for the Diabetes and it really affects my appetite for the first 24 hours, like I have to force myself to eat anything. I’ll be back to normal tomorrow.

{Dinner} Chicken Enchilada Casserole. I forgot to get a picture when it looked cute on my plate, instead you get a picture of the leftovers stuffed into tupperware. #momlife sorry.
