Baked Strawberry Oatmeal

I started off this morning with an hour of kickboxing blasts followed by leg work. I was a puddle of sweat by the end, but it was well worth it.

Also worth noting, I got to sleep in this morning and did this workout while everyone was awake – I think this could become a regular thing. No more getting up at 4am or giving up blogging / mom time while Emma is napping and everyone else is at school.

And then I made this breakfast that has been on repeat all week.

Baked Strawberry Oatmeal

So good, and it’s quick and easy to make too! All you need is 1/2 cup of oats and 1 cup of pureed fresh strawberries.

Mix together and bake at 350 for 30 minutes and then top with whatever you desire. I kept mine simple and added a couple of teaspoons of coconut butter. It doesn’t need any sugar or sweetener because of the strawberries.

Totally filling too- it was hours before I was hungry again.

Strawberry Oats

My day started off with this DVD- I managed to burn just over 500 calories in an hour.

The kickboxing portion (first 30 minutes) was SO much fun, then it was followed by a leg workout that had me begging for mercy. It legit hurt to walk most of the day yesterday and my inner thighs are still feeling the burn today.

I have a new love in my life. Strawberry oatmeal, I also add in a little bit of cinnamon and a dash of vanilla…otherwise it is perfect and sweet with the addition of the strawberries.

The rest of the afternoon was spent running around trying to find some good after Christmas deals. We all need new Christmas stockings and so far I have managed to find everyone one, but myself. Figures. I’m looking for a specific one and everyone is sold out. Since I only have 1 more to buy, I will go ahead and wait until next year. I can justify full price for 1 vs. 6!

We ended our night meeting up with some of my family at Red Robin.

I decided to go with the chicken fajitas which are normally my favorite, but last night they were cold and some of the chicken pieces weren’t even cooked all the way through! After a really long wait, all I wanted to do was go home. Everyone’s else’s food was awesome and I didn’t have to cook, so we’ll call it a 1/2 win. The vegetables were cooked perfectly and not as cold, so I ended up just having veggie fajitas- the other toppings were delicious!

That guac was awesome!

While it’s been fun having family in from out of town and going out to eat way more often than we typically do, I’m excited to get back on track and eating more at home again! Until then…chicken and vegetables for the win! My blood sugars are really starting to be in the normal region again and eating high carb meals just aren’t worth it…no matter how delicious!
