Instant Pot Sesame Curry Pork Tenderloin

We are supposed to be getting an ice storm tonight. It’s Spring, somewhere right?

Before that happened, I wanted to get as much laundry done and the house cleaned from top to bottom- don’t ask why, it’s just how my brain works. And after that happened, we knew we would be stuck in the house through the evening and possibly tomorrow morning, so we grabbed a few things and went to the church for a couple of hours. The kiddos and husband played basketball, some stretching and running laps and I got my sweat on.

While we were gone, I had a pork tenderloin thawing out and it was just about done when we got home. I had an idea for a recipe, but wasn’t sure how it turned out. Thankfully I took pictures along the way, because this was a winner!!

I like my meat on the done side, not too juicy or I won’t eat it. So if you prefer your meat a little less “done,” I would cut the cooking time down. This was perfect for us!

*1 cup Sesame Sauce

*Curry powder (to taste)

*1 cup water

*Add water to the bottom of your instant pot, place meat in the water, season with curry powder and then cover with the sauce.

Turn to manual, cook for 90 minutes and then do a quick release. This just fell apart, it was SO good!!! All of the kiddos loved it and requested seconds #success

Now I’m sipping on this Post workout drink- you can drink it within an hour of finishing or before bed. Since I like having a little sweet treat at night, this is my favorite! And waking up not super sore is a win too!

So now we wait. I am really hoping that we get more rain vs. ice tonight, but only time will tell. Keep your fingers crossed for us!!!

The Bachelor is Back

This is turning into the world’s longest Christmas vacation. My kids went to school all the way until December 23rd which means they do not go back until January 9th- seems like it’s years away at this point! Up until today things have been fine, but the boredom is settling in and today was quite possibly the world’s longest day. No one likes my ideas, everyone hates everything and everything is boring. Thankfully we have a birthday party at an indoor trampoline park tomorrow night so we can all get out and let out all of our pent up energy!

I found this at Costco and figured it would be good for lunches. One of the medications that I take makes me have little to no appetite by lunch time and I was hoping something delicious would help. Ehh, not really. I only managed to eat about 1/4 of this bowl. What I did eat WAS really good, I just don’t eat a lot for lunch anymore.

I took the oldest to wrestling practice and then it was the sweet, sweet release of toddler naptime. I made the other two go in their rooms for quiet time and I finally got to watch one of my greatest guilty pleasures- The Bachelor! Like a lot of the contestants mentioned, I was not a fan of Nick on the two Bachelorette seasons he was on, but when he was on Bachelor Pad this summer, I saw a different side of him and I’m so excited for this season…and it’s going to be a good one!

Before dinner, I decided to squeeze in my workout. It was a live workout that was recorded this morning. OMG. I was a sweaty disaster and every muscle was on fire! This workout was called Body Blast Boot Camp- it involved 6 rounds of cardio and then compound weight exercises. I will be doing a post this weekend about cathe.com which is where I do all of my workouts. Seriously, best $20 I spend every month.

Instant Pot BBQ Pork Tenderloin

After taking off a couple of weeks off from the exercise streak I was on, I knew today had to be the day I got back to it. I told myself “just 5 minutes,” and then 5 minutes came and passed and pretty soon I was 1/2 way through…and dying!

It was just about 50 minutes of sweaty, heart pounding step aerobics and it left me feeling all sorts of awesome after it was all done!

Once I dropped off the youngest at school, I made a much needed grocery run.  One of the medications I take kills my appetite. Especially breakfast, I usually have to force myself to eat and this morning was no exception. Larabar to the rescue.

My 3 oldest kids have school this week, but the husband is off of work until January, so we took advantage of just the 3 of us and treated ourselves to lunch. It was getting close to naptime, so we went somewhere close; Qdoba.

I broke out my new favorite kitchen appliance –the Instant Pot.

Instant Pot Pork Tenderloin

*Pork loin

*1 cup of water

* salt, pepper, onion, garlic

* cover in BBQ sauce (we used this one)

Season the pork, pour the water in the bottom of the pressure cooker, cover the pork in BBQ sauce. Then turn it to MANUAL and 90 minutes and then let it work it’s magic.
