That Escalated Quickly

After Emma woke up for the past few days when I did at 5am, I decided that yesterday was my last pre-dawn workout. Playing dodge the toddler and then dealing with cranky toddler all day is not my idea of fun, so starting today I am switching it up. Until my kids go back to school next Monday, I will either do it during naptime or before dinner, and then when school starts again, it will be naptime workouts for the win.

A week or so ago, I entered a giveaway that Amy at Running Escapades was hosting and I really didn’t think I was going to win.

After initially being completely freaked out and terrified, after looking at the website, I’m strangely excited. AND, the race in Michigan is going to happening on my birthday! It’s like it was meant to be.

My inlaws are in town until today, so we decided to celebrate my oldest daughter’s birthday with them since they won’t be here for her actual birthday (Jan. 4th). Can I just say how much harder a birthday is right after Christmas vs in December? My husband’s birthday is december 15th and at that point it’s all WOOOO, let’s party and buy all the things and go out to dinner, etc.

But, by this point, it’s ugghhh, no one wants to go to a birthday party or spend money or do anything but stay home. I get it, because I feel the same way, but the show must go on! She wants to take a few friends and go jump at Air Time on Friday night, should be fun and it will get everyone out of the house and off their ipods. Win. Win.

In other news, I finally got around to putting all of the Christmas stuff away yesterday, it’s so sad and empty without the Christmas tree, but it was time! And since it was so warm (well, warm for Michigan in January), we took the opportunity to take all of the outside decorations down as well.

Strawberry Oats

My day started off with this DVD- I managed to burn just over 500 calories in an hour.

The kickboxing portion (first 30 minutes) was SO much fun, then it was followed by a leg workout that had me begging for mercy. It legit hurt to walk most of the day yesterday and my inner thighs are still feeling the burn today.

I have a new love in my life. Strawberry oatmeal, I also add in a little bit of cinnamon and a dash of vanilla…otherwise it is perfect and sweet with the addition of the strawberries.

The rest of the afternoon was spent running around trying to find some good after Christmas deals. We all need new Christmas stockings and so far I have managed to find everyone one, but myself. Figures. I’m looking for a specific one and everyone is sold out. Since I only have 1 more to buy, I will go ahead and wait until next year. I can justify full price for 1 vs. 6!

We ended our night meeting up with some of my family at Red Robin.

I decided to go with the chicken fajitas which are normally my favorite, but last night they were cold and some of the chicken pieces weren’t even cooked all the way through! After a really long wait, all I wanted to do was go home. Everyone’s else’s food was awesome and I didn’t have to cook, so we’ll call it a 1/2 win. The vegetables were cooked perfectly and not as cold, so I ended up just having veggie fajitas- the other toppings were delicious!

While it’s been fun having family in from out of town and going out to eat way more often than we typically do, I’m excited to get back on track and eating more at home again! Until then…chicken and vegetables for the win! My blood sugars are really starting to be in the normal region again and eating high carb meals just aren’t worth it…no matter how delicious!

Instant Pot BBQ Pork Tenderloin

After taking off a couple of weeks off from the exercise streak I was on, I knew today had to be the day I got back to it. I told myself “just 5 minutes,” and then 5 minutes came and passed and pretty soon I was 1/2 way through…and dying!

It was just about 50 minutes of sweaty, heart pounding step aerobics and it left me feeling all sorts of awesome after it was all done!

Once I dropped off the youngest at school, I made a much needed grocery run.  One of the medications I take kills my appetite. Especially breakfast, I usually have to force myself to eat and this morning was no exception. Larabar to the rescue.

My 3 oldest kids have school this week, but the husband is off of work until January, so we took advantage of just the 3 of us and treated ourselves to lunch. It was getting close to naptime, so we went somewhere close; Qdoba.

I broke out my new favorite kitchen appliance –the Instant Pot.

Instant Pot Pork Tenderloin

*Pork loin

*1 cup of water

* salt, pepper, onion, garlic

* cover in BBQ sauce (we used this one)

Season the pork, pour the water in the bottom of the pressure cooker, cover the pork in BBQ sauce. Then turn it to MANUAL and 90 minutes and then let it work it’s magic.
