Slow Cooker Coconut Curry Chicken

I love my slow cooker- as a mom to 4 kids, having a slow cooker saves my sanity. Almost every meal this week has been cooked in the slow cooker and last night was no exception. What I love about this, is that you don’t need a crap ton of spices and it tastes amazing.

Ingredients:

1lb chicken

3Tbsp curry powder

2 Cups coconut milk

1 can diced tomatoes and onion

Salt, pepper, garlic

Frozen vegetables (I used peas and corn)

Directions:

Place chicken on bottom of crock pot- cover in salt, pepper, garlic, curry powder

Pour milk and can of tomatoes (do not drain)

Let cook on low for 3-4 hours and stir. Remove chicken and cut into cubes, return to slow cooker, stir in frozen vegetables. Cook on low an additional 1-2 hours.

Served over brown rice, this was amazing.
