I am not sure how much longer I can keep up with 4am wake up calls to work out. It was pretty easy the first 2 weeks, but now it’s getting harder and harder and I just don’t know if I have it in me! When the days were shorter and it was getting darker earlier, that was one thing, but now – I slept right through my alarm this morning and was almost late in getting the 2 oldest off to school…thankfully they woke up with their alarms! I’m going to do a naptime workout today and see how that goes. I’m not a night person, so I know if I wait too long or until after dinner, it’s just not going to happen.
That being said, I forced myself through this cardio workout yesterday, I really just wanted to go back to bed, but kept on going.
After everyone left for school, I had my Fiber and oatmeal with peanut butter. Pretty standard right now, just the thought of eggs makes me want to hurl and I used to eat eggs every single morning for years!
Even if I was a food photographer, there wasn’t anything that could have made my lunch look appetizing…but I assure you it was delicious! Salsa chicken with some shredded corn tortillas added in.
Instant Pot Chili Lime Pork Chops
The more I use the instant pot, the more I love it! These were hands down, the best pork chops I have ever made. *Disclaimer* – these were Costco pork chops which are about double the thickness of other pork chops I have used in the past. Because of that, I doubled the cook time recommended for other Instant Pot recipes and these came out perfectly.
I placed the chops in the pot, covered in 1 cup of water and then covered the meat with this marinade. I used about 1/2 the bottle, but next time I will add the entire bottle. I was worried it might be too spicy, but even my 2 year old loved the chops. Then I set the Instant Pot to MANUAL and 30 minutes. That’s it. Super easy and tasted like they had been cooking all day long and marinating all day as well.
