There are so many variations of protein balls floating around the blogiverse, but I thought I would try my own version for kicks and giggles anyway.
But, before we get to that. For the last almost 15 months, the only way Emma would nap is if she was in the Ergo (pretty much months 3-7) or on my chest.
Oh man, good thing my tubes are tied. She was just a couple of weeks old here.
A few months ago. Cutest little lips ever.
But for the last few days; no more. She likes to be snuggled to sleep, and then she climbs out of my arms to lay down next to me. I should be elated. But, instead. I cried. My last baby. I have cherished every nap, every snuggle, but now itโs time for her to be without me. Iโll miss our snuggles, my little lamb chop.
Just seconds after falling asleep, she crawled out of my arms about 10 seconds later.
Sigh.
So, letโs get on to that recipe!
Chocolate Peanut Butter Protein Balls
* 4 Tablespoons coconut flour
* 1 heaping Tablespoon Cocoa
* 1 Tablespoon Brown Sugar
* 1 Scoop Protein Powder (I used chocolate)
* Crap ton of peanut butter ( I used a giant serving spoon, sorry, not technical)
* Almond Milk
Directions
Mix dry ingredients first, then add in peanut butter. When that is mixed, add in almond milk a tablespoon at a time, until it is well mixed and a wet dough. Form into balls and coat with shredded coconut.
Can eat immediately, but they hold together better if chilled overnight in the refrigerator.
It’s so sad when they get big enough to start separating from us…sigh..
