Baked Pumpkin Oatmeal

I have to share this recipe with you guys today, not only was it super easy to make, but it was delicious, full of flavor and because it’s baked, almost had a bread like taste to it.


Baked Pumpkin Oatmeal

*1/2 cup water

*1/2 cup pumpkin puree

*1/2 cup oats

Mix all together and put into an greased, oven safe dish. Mix in the following to taste:

*pumpkin pie spice, cinnamon, brown sugar

Bake at 350 for 45 minutes to an hour. The longer it cooks, the denser it gets and a crust will form on the top. The above picture was after an hour of cooking.

Topped with crunchy peanut butter, but would also be delicious with sliced bananas, apples or even cream cheese. The possibilities are endless.

Weekday mornings are pretty busy around here, my morning starts at 6:45 when I get up with my 8th grader and I get a chance to eat around 8:30 after dropping off the 2nd and 5th grader off at their school. This cooked while I was getting everyone up and ready and was ready for me to eat when I got home.
